Guar gum is the ground endosperm of the guar bean, an annual legume native to India and Pakistan.
It's primary use is as an emulsifier and thickening agent.
Guar gum is used as a thickener, emulsifier and firming agent in baked goods, jams and jellies, soups, salad dressings, sauces, syrups, juices and dairy products.
Use at a rate of up to 1 percent by weight, which is equal to one-half teaspoon per cup of liquid.
