Guar gum is the ground endosperm of the guar bean, an annual legume native to India and Pakistan.
It's primary use is as an emulsifier and thickening agent.
Directions: Guar gum is used as a thickener, emulsifier and firming agent in baked goods, jams and jellies, soups, salad dressings, sauces, syrups, juices and dairy products. Use at a rate of up to 1 percent by weight, which is equal to one-half teaspoon per cup of liquid.
